以前在国内就超级喜欢潮汕砂锅粥,每次面对“吃什么”这个世纪难题,潮汕砂锅粥这个答案必然位列前三。所以综合了各种食谱以及自己实践中改良,数十次实践,我做出来了理想中的砂锅粥。
😂不一定很潮汕,但是这是一碗合格的砂锅粥
下面❗️多图警告⚠️
材料准备以及处理方式⚠️请酌情增减
1️⃣有头整虾🦐:用厨用剪刀✂️剪开虾头与虾尾,虾头放一边备用,虾尾开背去虾线。如果是两人粥,可以用16-20只虾🦐如图。

2️⃣干贝和咸蛋黄(扇贝柱四个,咸蛋黄四个,如果有干贝可以用20个以上),由于不能出门手头没有干贝,我用了冷冻的扇贝柱代替,感觉没有干贝效果好。扇贝柱切成丁,咸蛋黄一颗切成16块丁。

3️⃣香菇干泡发,泡香菇的水千万不要倒,可以代替部分煮粥的清水,这样更鲜美

开始烹饪⚠️
1️⃣冷锅下油,中小火🔥,加入虾头炒出虾油,过程中可以用勺子🥄挤压虾头,这样红油马上就出来了。

2️⃣中小火🔥不变,加入咸蛋黄丁,扇贝柱丁,香菇丁,稍微翻炒2-3分钟

3️⃣加泡了香菇的香菇水(和干贝水,但是我没有干贝😂),缓慢倒入锅中,这样有些泡香菇表面的渣渣在水底,这部分丢掉就好。
这一步的水量尽量保持在3碗(饭碗大小)左右,香菇水干贝水不够,清水来凑。

4️⃣加米,一般来说~几个人几杯米

5️⃣依然中小火🔥开煮。先煮15分钟。然后每五分钟看一次并且搅拌一下,这样不会糊锅。也可以看干湿程度按照爱好加清水调节❗️❗️❗️总共煮到35分钟左右。喜欢软糯的可以煮到45分钟。

6️⃣加入虾尾,盐,搅拌均匀,持续加热5-10分钟。

7️⃣按照个人喜好加香葱香菜搅拌离开灶台上桌。
