这是一个中西合璧式的红丝绒蛋糕,用中式的红丝绒戚风蛋糕配搭了西式的芝士奶油霜,这个配搭既不失西方的红丝绒蛋糕的味道,又可以更迎合中国人的口味,可谓是别有一番滋味在心头哦!!
以下的是一个8寸的蛋糕配方。

制作步骤

首先把牛奶+食用油+30克糖倒入干净的容器里混合搅拌均匀并搅拌至成米浆的样子

red velet 就是红丝绒溶液,可以选用这个溶液,也可以用红曲粉代替,如果不喜欢那么鲜红的,可以加一点可可粉进去把颜色调暗一些……

加入红丝绒溶液

搅拌均匀

再筛入低筋面粉

搅拌均匀

再加入蛋黄

搅拌均匀即可。
这个时候可以开始预热烤箱,165摄氏度(330华氏度)

蛋白加入柠檬汁/白醋用中高速打发,60克糖分三次加入蛋白里,打发至湿性发泡,打蛋头拿起能拉出小尖头即可。
⚠️注意别打发过头哦!!打蛋头拉起的时候蛋白还成流动状态即打发还不到位,如果拉起的时候拉不出尖头,就是打发过头了……

然后把打发好的蛋白分2-3次加入红丝绒面糊里

用上下翻拌的方式翻拌均匀……千万别搅拌过度哦……搅拌过度会导致面糊起筋,从而蛋糕会出现明显凹腰的问题……

把蛋糕糊倒入蛋糕模具,然后往桌子上轻摔两下,把里面的空气震动出来

放入烤箱里,165摄氏度(330华氏度),中小烤箱的下层烤45分钟,如果是大烤箱,放中下层。

烤好后拿出来倒扣在凉架上待凉。也可以直接拿出的时候轻率几下,把蛋糕里的空气震出来,减少凹面的现象……

稍凉后,把蛋糕从腰部开始分割成三等片,然后放一旁待其完全凉透

蛋糕切皮待凉的时候我们就来做芝士奶油霜,奶油奶酪和黄油要提前拿出来室温软化,然后加入糖粉,用厨师机/电动打蛋器打发到蓬松成奶油状态。

再打发淡奶油,中速打发至硬性企身,开始呈现粗糙的状态即可

然后把打发好的奶油奶酪加入到淡奶油霜里

接下来就开始组装蛋糕,首先拿出一片蛋糕

在蛋糕面上抹上一层约1cm厚的芝士奶油霜

抹平整即可,无需抹光滑

然后盖上另一层蛋糕片

同样再抹上一层约1cm厚的芝士奶油霜

再盖上最后那层蛋糕片

然后这次就把整个蛋糕都抹上一层约1cm厚的芝士奶油霜,因为还要盖上一层蛋糕屑,所以面部无需抹光滑,抹平整就可以。

接着在蛋糕表面撒上一层蛋糕屑,随便挤个花就完成啦……当然,这个只是参考的装饰方法,大家可以自行发挥想象力去做装饰的哦!!
制作小贴士
这个8寸蛋糕的蛋糕屑撒面大概用半个6寸蛋糕的量,做法就是把半个6寸蛋糕切块放入搅拌机里搅打成碎,即成了撒面的蛋糕屑了。6寸蛋糕的制作材料是8寸的0.6,即把上面的8寸蛋糕的材料的量乘以0.6即可。
