其实材料很简单,步骤也就揉面,洗面,沉淀后煮凉皮面筋,然后就是拌。但是每个步骤会重复来所以耗时长些,特别是粉浆的和清水的分离需要时间长些才能分离开来,于是洗好的粉浆最好隔天来做凉皮。注意:想吃凉皮的妹子小哥要提前一天揉面洗面才行!!!

1:准备材料。高筋面粉500g(不需要面筋的大家伙用普通面粉就行,更简单,我喜欢QQ的面筋,于是用高筋面粉才有面筋洗出来),盐6g,酵母3g。

2:高粉加适量清水揉开,注意水不能一次太多否则太稀了。先加一些揉开然后再加,建议干些好。揉到不粘手静待10分钟左右然后继续揉,揉好包好醒发半小时后如最后一幅图那样面团比较光滑就行。

3:洗面。把面团放入大容器里,清水漠过面团,静待20分钟左右然后尽你平生最大的力气使劲揉搓面团,待水变成白色,用筛子把白色的水过滤待用。进行第二次第三次的洗面,第二次洗好的粉浆水倒入第一次里面。第三次比较稀了,可以直接把水倒掉。面团洗好后变成面筋了。

4:面筋。面筋放入有盖的容器里(我用保鲜膜),加入酵母,稍微揉搓下,然后封好,常温下发酵一个晚上就好。隔天取出来,倒掉多余的水分,揉搓面筋,放入锅里蒸,时间长些,不要看见膨胀就关火,因为里面可能还没熟。待熟后,冷却后膨胀的面筋体积又缩小了,拿刀切成小块备用。

5:放了一个晚上的粉浆水已经沉淀好了,把上面的清水倒掉,然后往粘稠的面糊里加入两三勺清水(不加的话面糊太干,到时蒸出来的凉皮会裂),搅拌均与。锅里烧热水,准备圆形烤盘(我就用月饼盒代替了),盘底抹点油,倒入两三勺面糊(厚薄自己把握),放入热水里煮,盖上盖子大约一两分钟,看到面糊变透明,鼓起说明熟了。把盒子放凉水里冷却,把凉皮撕出来。重复知道面糊用完,把凉皮切成手指粗细待用。

6:这是凉皮和面筋已经熟了,拌上喜欢的酱汁和蔬菜就可以开吃啦。喜欢辣的可以干辣椒切碎,热油淋上去,香香的。调料的话可以醋,糖,酱油,盐,花生酱,水,胡椒粉等等喜欢的自己一起调好稀释好一起倒入,搅拌好就可以开吃啦!!!
